quick refurbishment of the restaurant at
the Duxton Hotel in Perth (the Firewater
Grille) was an incredible accomplishment.
National shopfitting, design and project
management company, JBM Projects, turned
around the five-star fitout in a mere six weeks,
which is a considerable feat within the design
and construction industry, especially given the
magnitude of the project.
The company drew on its significant
hospitality experience, which includes winning
the 2011 Queensland Master Builders Design and
Shopfitting Award for its work on the Stella Rossa
(Eagle Street) venue in Brisbane.
The Firewater Grille, designed by Impressions
Architectural and Interior Designers, includes
a new cocktail bar, 156-seat dining area and a
full-display island kitchen with luxury materials
and the latest equipment.
The restaurant’s namesake, the custom-designed
and built glass waterfall feature with built-in
fireplaces, was the core concept of the space.
The brief required JBM Projects to push the
envelope and adopt innovative features and
technology in order to match the hotel’s overall
style of classic elegance and modern luxury.
The high quality fitout includes imported
stacking stone, private seating booths with
luxury curtains, custom joinery, a 500-bottle
temperature-controlled wine room, extensive
artwork, and glass panelling to display
a high-tech kitchen that boasts a fully
ventilated German GIF ceiling.

The challenge - creating and installing the luxury fitout for
