Finally, thanks to relaxed liquor licensing laws
and some forward-thinking business types, small
bars and restaurants are becoming a regular sight
throughout the Perth CBD and the inner suburbs.
But not many are as innovative, daring and
downright exciting as the Greenhouse Perth.
Situated on St Georges Terrace, at the base
of enex100 and right next door to the late-19th
century built Trinity Church, the Greenhouse
Perth is a joint venture between Victorians Joost
Bakker, Paul Aron and Jason Chan.
Joost, a veritable "waste wizard" who comes
from a long line of Dutch flower growers, is
the driving force behind the architectural,
horticultural and sustainable side of the project,
while Paul and Jason are the hospitality experts.
e Greenhouse Perth follows on from the
Greenhouse by Joost -- a temporary structure
erected in Melbourne's Federation Square at
the end of October 2008. So successful was the
project's three-month stint that Joost and his
team quickly set about finding the Greenhouse a
permanent home. We're thrilled that that home is
100 St Georges Terrace.
Built almost entirely from recycled or recyclable
materials, the Greenhouse Perth consists of a steel
frame clad in plywood. e wall and roof cavities
are filled with straw bales for insulation, while the
external corrugated iron cladding is covered with
a vertical wall garden comprising steel mesh and
4000 terra cotta pots filled with strawberry plants.
A rooftop garden provides herbs, vegetables and
fruit for the kitchen while a worm farm recycles
organic waste from both the kitchen and bar.
e furniture is designed by Joost and includes
tables made from the plywood floor of the
Melbourne project and chairs made from old road
signs. Light shades are fashioned out of reclaimed
fencing wire, while old gas cylinders have been
transformed into serving bowls and ice buckets.
Wine is served in old jars and beer in glasses made
from recycled Creatures beer bottles.
e Greenhouse Perth is all about minimising
the human footprint and providing an example to
builders, designers, restaurateurs and the public
about how we can tread that fine line between
functionality, sustainability and beauty.
Open from Monday to Saturday, it offers
food and drink that is tasty, honest and simple.
And that couldn't fit more perfectly with the
philosophy behind the project itself.
